SALAD INGREDIENTS
- 11 oz baby spinach
- 4 hard-boiled eggs, sliced
- 1 C broccoli, chopped into small florets
- 2 C cauliflower, chopped into small florets
- 1 cucumber, sliced
- 2 Tbs. unsalted toasted almonds
HEALTHY SPINACH SALAD DRESSING INGREDIENTS
- ⅓ C extra virgin olive oil
- 3 Tbs. apple cider vinegar
- 2 Tbs. Dijon mustard
- 2 Tbs. low sodium soy sauce
INSTRUCTIONS
- Combine spinach, eggs, broccoli, cucumbers, cauliflower, and almonds in a large bowl. Set aside.
- Combine olive oil, apple cider vinegar, Dijon mustard, and soy sauce in a separate bowl. Mix until well combined.
- Pour dressing over salad and toss to coat evenly.
- Serve immediately.
