Sheet Pan Stir-Fry (7 day approved)
Ingredient:
- Boneless, skinless chicken breast cut into 1" cubes
- 2 Red bell peppers
- 2 cups frozen green beans
- Everything but the bagel seasoning
Marinade:
- 1/3 cup low sodium soy sauce
- 2 tbsp white wine vinegar
- 2 tbsp stevia
- 1 tbsp olive oil
- 1/2 tsp garlic powder
Method:
- Combine soy sauce, vinegar, stevia, oil and garlic powder
- Pour 1/2 of the marinade into large ziploc bag, add all chicken. Let it set for 4 hours or longer.
- After chicken has marinated, preheat oven to 425, place foil on a sheet pan and put in the oven to allow pan to get hot (10 min). Drain marinade from chicken, discard marinade
- To the hot pan, add chicken in a single layer and bake for 8 min.
- After the 8 minutes and veggies and everything but the bagel seasoning. Bake for an additional 12 minutes or until chicken is cooked completely.
- Remove from the oven and brush with the remaining marinade.
