 Sheet Pan Stir-Fry (7 day approved)

Ingredient:

  • Boneless, skinless chicken breast cut into 1" cubes
  • 2 Red bell peppers
  • 2 cups frozen green beans
  • Everything but the bagel seasoning
Marinade:
  • 1/3 cup low sodium soy sauce
  • 2 tbsp white wine vinegar
  • 2 tbsp stevia
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
Method:
  1. Combine soy sauce, vinegar, stevia, oil and garlic powder
  2. Pour 1/2 of the marinade into large ziploc bag, add all chicken. Let it set for 4 hours or longer.
  3. After chicken has marinated, preheat oven to 425, place foil on a sheet pan and put in the oven to allow pan to get hot (10 min). Drain marinade from chicken, discard marinade
  4. To the hot pan, add chicken in a single layer and bake for 8 min.
  5. After the 8 minutes and veggies and everything but the bagel seasoning. Bake for an additional 12 minutes or until chicken is cooked completely. 
  6. Remove from the oven and brush with the remaining marinade.
  7. Enjoy!
