Sheet Pan Veggies with Sausage (7 day approved)
Ingredients
● 2 cups broccoli florets
● 2 cups asparagus, cut into 2-inch pieces
● 2 cups zucchini cubed
● 1 large red onion, sliced
● 2 Tbs. EVOO (extra-virgin olive oil)
● 1 tsp. salt
● ¼ tsp. ground black pepper
● 13 oz pack turkey sausages, cut into ½ inch slices
● 1 tsp. red pepper flakes, optional
Directions
- Preheat
the oven to 400 degrees F.
- Line a
baking sheet with aluminum foil. Place veggies in a bowl, and toss with EVOO.
Spread out in one layer on a baking sheet. Season with salt and pepper.
- Roast
for about 15 to 20 minutes.
- Remove
the baking sheet from the oven and turn the veggies. Add the sliced
sausage to cooked the cooked veggies and roast an additional ten minutes, or
just until browned.
- Remove the sheet pan from the oven and top with roasted red pepper flakes.
- Serve
immediately.
