Sheet Pan Veggies with Sausage (7 day approved)

Ingredients

● 2 cups broccoli florets

● 2 cups asparagus, cut into 2-inch pieces

● 2 cups zucchini cubed

● 1 large red onion, sliced

● 2 Tbs. EVOO (extra-virgin olive oil)

● 1 tsp. salt

● ¼ tsp. ground black pepper

● 13 oz pack turkey sausages, cut into ½ inch slices

● 1 tsp. red pepper flakes, optional


Directions

  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with aluminum foil. Place veggies in a bowl, and toss with EVOO. Spread out in one layer on a baking sheet. Season with salt and pepper.
  3. Roast for about 15 to 20 minutes.
  4. Remove the baking sheet from the oven and turn the veggies. Add the sliced sausage to cooked the cooked veggies and roast an additional ten minutes, or just until browned.
  5. Remove the sheet pan from the oven and top with roasted red pepper flakes.
  6. Serve immediately.
