Shrimp and "Grits"
Ingredients:
- 1 bag raw frozen shrimp deveined, tail off
- 3 strips of bacon
- 3 green onions
- 1 cup diced onion ( I used frozen and it got too juicy)
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp red pepper flakes
- 1 bag frozen cauliflower
- 2 tbsp butter
- 1 tbsp mayonnaise
- handful of shredded sharp cheddar cheese
Method:
- Place bag of frozen cauliflower in the microwave and cook and directed.
- Dice onions (or use frozen) and bacon, fry until almost cooked. (I used kitchen shears to cut bacon up straight into the pan).
- Once almost fully cooked, add the shrimp and seasonings and 1 of the diced green onions.
- While shrimp is finishing cooking, take the cooked cauliflower out of the microwave and pour into a mixing bowl with 2 tbsp of butter. Use a hand held blender to blend the cauliflower to resemble mashed potatoes. Once it is to the desired consistency, spoon in the mayo and stir. Then add the cheese.
- Once combined, divide into 2 bowls then top with the shrimp mixture.
- Cut the remaining 2 green onions on top and serve immediately
Notes:
This dish serves 2 people. You can use a tablespoon of Cajun spice instead of the listed spices. That is just what I had on hand. You can also spice is up a little more with some cayenne pepper.
