Chicken Fajitas (7 day approved)
1 pound boneless, skinless chicken breast cut into about 1 inch cubes
1 Tbs. of olive oil
2 cups frozen onion/pepper blend
1 Tbs. ground cumin
1 Tbs. garlic powder
1 Tbs. chili powder
¼ tsp. salt
¼ tsp. pepper
1 lime, cut into wedges
Fresh cilantro, chopped
1 bag riced cauliflower
Add EVOO to frying pan, add chicken once it becomes hot. Cook for about 2 minutes on each side, add onion and pepper blend and the next 5 spices. Cook until chicken is cooked through. If the mixture becomes too dry, add water about 1 tablespoon at a time just until it becomes moist.
In the meantime:
While the chicken mixture is cooking, pop the riced cauliflower in the microwave as directed. Spoon out into 4 bowls.
Once the chicken mixture is fully cooked, spoon on top of cauliflower. Squeeze with fresh lime wedge and cilantro.
Notes: you can also use a couple tablespoons for salsa for added flavor. Keep in mind that during the 7 days, you cannot use sour cream or cheese.
